  • 1/4 cup nutritional yeast (optional, for a cheesy flavor)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon turmeric (for color)
  • 1/2 cup toasted nuts (almonds, walnuts, or pine nuts, for garnish)

Instructions

  • Sauté Vegetables:

    • Heat olive oil in a large pot over medium heat.
    • Add chopped onion and minced garlic, and sauté until softened and fragrant, about 5 minutes.
  • Cook the Broccoli and Potatoes:

    • Add the diced potatoes and broccoli florets to the pot.
    • Pour in vegetable broth and bring to a simmer.
    • Let it cook for about 15-20 minutes, or until the potatoes and broccoli are tender.
  • Blend the Soup:

    • Once the vegetables are tender, remove the pot from heat.
    • Use an immersion blender to puree the soup until smooth. Alternatively, transfer the mixture in batches to a regular blender and blend until smooth.
